What is yakitori sauce?

Yakitori (焼き鳥) means “grilled bird.” The sauce that defines it is tare — a soy-based glaze cooked down until it’s thick, glossy and deeply caramelised. Compared with teriyaki it’s darker, smokier and more savoury, designed to cling to skewers and char over open flame. Brushed on in repeated coats, it builds the sticky, sweet-and-smoky lacquer that makes street-stall yakitori so addictive.

Halal chicken yakitori skewers

Classic negima skewers — chicken and spring onion, basted in layers until lacquered and charred. No grill? They work just as well under your oven grill or in an air fryer.

Ingredients

  • 600g halal chicken thigh, cut into bite-size chunks
  • 2 large spring onions (or 1 leek), cut into thick pieces
  • 8 bamboo skewers, soaked in water 20 min
  • 6 tbsp Think GG Halal Yakitori Sauce
  • 1 tbsp oil
  • Sesame seeds or shichimi, to finish (optional)

Method

  1. Thread the chicken and spring onion onto the skewers, alternating pieces. Brush lightly with oil.
  2. Grill over high heat — charcoal, griddle or oven grill — turning, until the chicken is almost cooked through, about 8 minutes.
  3. Brush generously with yakitori sauce and return to the heat for 1 minute so it caramelises.
  4. Repeat the basting 2–3 times, building up glossy, charred layers of glaze.
  5. Finish with a sprinkle of sesame seeds or shichimi and serve hot.

Pro tip: baste in layers rather than all at once — that’s how you get the deep, lacquered look without burning the sauce.
