Teriyaki comes from two Japanese words — teri (shine) and yaki (grilled) — and that shine is the whole point. Ingredients
- 600g halal chicken thighs, boneless
- 6 tbsp Think GG Halal Teriyaki Sauce
- 1 tbsp oil
- 1 tsp toasted sesame seeds
- 2 spring onions, sliced
- Steamed rice, to serve
Method
- Pat the chicken dry and season lightly with salt and pepper.
- Heat the oil in a pan over medium-high. Sear the chicken skin-side down until golden, 5–6 minutes.
- Flip and cook through, another 4–5 minutes.
- Pour in the teriyaki sauce. Let it bubble and reduce for 2–3 minutes, spooning it over until the chicken is glossy and coated.
- Slice, spoon over any glaze left in the pan, and finish with sesame seeds and spring onion. Serve over rice.
Tip: The same sauce works as a 30-minute marinade, and is brilliant brushed onto salmon, prawns, tofu or grilled vegetables.
